Say WHAT?! Yes, its true. I whipped Champagne Cupcakes up on New Years Eve and had to share them with you all because they were incredible! I often cook with wine and beer but never with champagne so I was hesitant about how they would turn out but they were amazing and INCREDIBLY EASY. Better yet, you can pull the flavor of the champagne perfectly when biting into these bad boys but no remnants of the alcohol flavor remain (which is probably for the best when it comes to baked goods). The champagne, along with its flavor, leaves these cupcakes with a slightly crispy outside. I know that sounds odd but just try them…it was a perfect combo of moistness and crispiness that had my husband and I coming back for LOTS more.
Champagne Cupcakes Recipe
You will need
1 box of vanilla or white cake mix (I used Betty Crockers extra moist white mix)
3 egg whites
1 1/4 cups of champagne (I used Karma but it can be anything)
1/3 cup of butter (room temperature- done melt it or your cupcakes will be too crunchy/crispy)
2 tablespoons of sugar
and frosting (I went the lazy way and just bought store made haha)
1- Preheat the oven to 350.
2- In a bowl combine the butter, eggs, champagne, sugar, and cake mix until smooth.
3- Line a cupcake pan with liners, if you choose. If you do not use liners be sure to use a lot of cooking spray. I’m not sure why but the champagne REALLY lends a sense of CRISPY to these cupcakes so without a liner the cupcakes are that much more crispy on the outside. I tried with and without a liner and we loved them both.
4- Bake for 18-20 minutes or until a toothpick comes out clean.
5- Let sit in the pan for a couple minutes then move them to a cookie sheet and let completely cool.
6- Once completely cooled frost your cakes and decorate as you wish :-D.
…and VOILA you have your Champagne Cupcakes.
A fun hint: I added a splash of champagne to the frosting that I used on my husband and I’s cakes :-D. We loved the extra boozy taste!
